Simple, healthy no-bake desserts

Desserts are delicious served fresh, and so easy to make when they require no baking. Here are some yummy and healthy no-bake dessert – great for an occasional treat.

Chocolate avocado mousse

Serves: 6

Ingredients

2 large ripe avocados (peeled & stoned)
3 tabs raw honey or real maple syrup, or to taste
1 teaspoon vanilla extract
50g raw cacao powder
a pinch of salt
Half an orange, zested (optional)
Shaved dark chocolate, to serve


Method

  1. Add a pinch of salt and beat the avocados until smooth. Or blend in a food processor.
  2. Add the honey or maple syrup with the vanilla, cacao and blend again until completely combined. Taste and, if desired, add more honey.
  3. Spoon the mousse into 6 sweet wine glasses and place in the fridge for a least an hour before serving
  4. Serve with shaved dark chocolate.

This scrummy date and pecan dessert is vegan.

Pecan date bites

Serves: 8

Ingredients

Base
1 1/2 cup rolled oats
1 cup raw almonds
6 tabs real maple syrup
2 tspn ground cinnamon
1/2 tspn sea salt

Caramel Dates
400g medjool dates (approx 1 1/4 packed cup)
1/4 cup warm water
1 tspn vanilla extract
1/4 tspn sea salt

1 cup pecans, lightly chopped


Method

  1. Place all base ingredients in a blender and pulse until well combined and the almonds are broken up into very small pieces
  2. Use your hands to pat base into an 18cm x 18 cm (8 x 8 inches) pan
  3. Blend the Caramel Dates ingredients (using same blender, no need to clean) until smooth and stiff. Adjust water if need be
  4. Spread the Caramel Dates on top of the base
  5. Press the pecan pieces down onto the caramel layer with hands, so that they are firmly set
  6. Place in freezer for at least 30 minutes before taking out to cut into bite sized pieces.
  7. Store in freezer and take out 10 minutes before eating.
